Murray River Camp Oven Beef Casserole

A hearty, crowd-pleasing meal that’s perfect after a day exploring the Mildura region.

Serves

6–8 people

Ingredients

  • 1.5kg diced chuck steak
  • 2 tablespoons olive oil
  • 2 brown onions, diced
  • 4 carrots, chopped
  • 3 celery stalks, sliced
  • 4 potatoes, cubed
  • 3 cloves garlic, crushed
  • 500ml beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method

  1. Heat the camp oven over hot coals.
  2. Add olive oil and brown the beef in batches.
  3. Remove beef and sauté onions, garlic and celery until softened.
  4. Return beef to the pot.
  5. Add carrots, potatoes, stock, tomato paste, Worcestershire sauce and seasonings.
  6. Stir well and bring to a gentle simmer.
  7. Place the lid on the camp oven.
  8. Add a layer of hot coals on top of the lid.
  9. Cook slowly for approximately 2.5 to 3 hours.
  10. Stir occasionally and top up with a little stock if required.

Serve with crusty bread and enjoy beside the river.
